Preheat oven to 280 degrees farenheit
1/2 cup low salt soy sauce
1/2 cup mirin
2inch piece of fresh ginger sliced thinly
4 cloves garlic
1 medium onion chopped coarsely
1 cup water (or chicken stock)
Brown pork on stove top.
Put pork and all the other ingredients in baking dish in oven.
Cook uncovered for about 2 hrs turning every 20 minutes.
Remove from oven, pour sauce into pan, thicken with cornflour.
Serve with side vegetables.

Teriyaki salmon
3/4 cup soy sauce (low salt kind)
1/2 cup mirin
1/4 cup sesame oil
2 inch knob of ginger chopped finely
6 garlic cloves
1 tablespoon cornflour
2 1/2 lbs salmon
Put all ingredients together in bowl and marinate salmon for 1/2 hr.
Grill salmon on one side for 9 minutes.
Mix sauce in frypan, cook a little, add cornflour to thicken and cook a little more. Add whole piece of salmon cook gently for 10 minutes or however long it takes for the family to get to the table.
Serve with saffron rice and a little steamed chinese cabbage and celery.
